This tasty and healthy chicken and veggie recipe could be made with all olive oil in place of the butter when cooking the chicken tenders. In doing so you would sacrifice some of the flavor added by the butter, but if you’re worried about the fat & cholesterol, then by all means do so.
You get a great variety of flavors with the asparagus, green pepper and the cheese. To vary it even further and make a recipe of your own you could substitute other vegetables. Some you might think of are: broccoli or Brussels sprouts. They would add a different flavor mix if substituted for the asparagus..
For the green pepper you might substitute another variety of pepper. Jalapeno comes to mind, but I would use a much smaller quantity..
You could change this recipe to an Alfredo sauce dish by adding the Parmesan cheeses, some cream or milk with stirring and heat after step 7. Then add the veggies and chicken, omit the breadcrumbs, and finish the dish on the stovetop.
Ingredients.
6 large asparagus spears2 chicken breast tenders, seasoned with salt and pepper (about 3 oz) 1/2 green pepper cut in thin strips 1/2 onion slice thin 2 tablespoon grated Parmesan cheese 1/3 cup bread crumbs 2 tablespoon olive oil 2 tablespoon butter.
Instructions.
1 – Snap bottom fibrous sections of asparagus spears. 2 – Cover with salted water and cook until crispy tender (about 5 minutes). 3 – Remove, drain, and set aside. 4 – Heat oven proof skillet and add olive oil 5 – Saute’ pepper strips and onion slices until onions are translucent. 6 – Remove and set aside then in the same skillet add the butter and saute’ the seasoned chicken tenders for 1 – 1 1/2 minutes per side. 7 – Remove the chicken pieces and set aside. 8 – Layer the asparagus spears on the skillet bottom, then add onions and peppers and chicken tenders, and top with bread crumbs and Parmesan cheese. 9 – Bake for about 10 minutes in a preheated 400 degree oven.

When we think of Creole cooking, Louisianna in general and New Orleans in particular come to mind. Creole cooking is a combination of French and Spanish cookery with influences from African Americans, native Americans, and other settlers of Louisiana. Creole dishes are quite often spicy and usually have peppers, celery, tomatoes, hot pepper sauce, and more. Because Louisiana has a long tradition of cooking and serving seafoods like shrimps, lobsters, oysters, and many fishes, most of the Creole recipes are built around these. Substituting chicken or turkey gives you many of the same flavors, and also chicken and turkey are more widely available and often more economical.
The dish presented here uses several of these ingredients and is usually served over cooked long grain brown rice. Although this recipe calls for chicken breast, you could easily substitute shrimp, cut up fish, lobster, or any other food from the sea. A combination of chicken and shrimp would make a good “surf and turf” dish and I am sure would be delicious also. Next time you are in the mood for a traditional Southern recipe try this one. Your guests will be pleased!
Ingredients
2 tablespoons olive oil 4 chicken breast ‘tenders’ cut into bite size pieces 1 small yellow onion, chopped 1 bell pepper, diced 1 stalk of celery, chopped 1 clove garlic, minced 1/2 teaspoon paprika 1/2 teaspoon dried thyme 1/2 bay leaf 1/2 teaspoon salt 1/8 teaspoon black pepper 4 oz mushrooms sliced
Instructions
1 – Heat olive oil in large skillet 2 – Add onion, bell pepper, celery, and garlic3 – Saute’ until onion is translucent 4 – Remove vegetables and set aside 5 – Add chicken pieces to same skillet and saute’ until browned 6 – Add back the reserved vegetables and add all the spices.7 – Cover and simmer under reduced heat for 20-30 minutes.8 – Add mushrooms and simmer another 5 minutes.
Comment – Served over browned rice it tastes great!

This is one of those easy recipes for kids that will keep the whole family happy.
Combine all of the marinade ingredients together in a bowl. Stir the chicken into the marinade until its all good and covered, put clingfilm over the top of the bowl to cover, and place in the fridge for one hour.
Thread the chicken and the vegetables on the wooden skewers, alternating chicken and vegetables. Tip: soak wooden skewers in water for 20 minutes to stop them from burning in the oven.Lightly oil a baking tray and place kebabs on tray and cook in a preheated oven at 220°C for approximately 20 minutes.Serve two skewers per person, and some form of potato side dish, such as potato chips

Get little fingers busy and helping you…cut up the vegetables and chicken and place on separate plates, then gather the children around the table and hold a threading competition to see who is the quickest at threading the chicken/vegetables onto the skewer, or who can get the most amount of vegetables/chicken onto their skewer!

Baked Dijon Chicken (4 servings)
Ingredients:
1 pound boneless, skinless chicken breast (or you can use turkey), removed of visible fat
2 Tbl. lemon or lime juice
1 Tbl. course-grained or Dijon mustard
1/8 tsp. black pepper
1/2 tsp. minced garlic (from a bottle works nicely)
Preheat your oven to 375 degrees.
Rinse the chicken and pat it dry and arrange it in a glass baking dish.
Using a small bowl, stir together all the remaining ingredients and spread over the top of the chicken. Do this piece by piece.
Bake uncovered for 15 to 20 minutes. The chicken should be tender and no longer pink.
Rosemary Turkey With Mushrooms (4 servings)
This is a treat that you can serve company. It is an elegant and delicious dish.
Ingredients:
1 pound turkey breast tenderloin slices
1/2 c. chicken broth, low sodium
1/8 tsp. each black pepper and salt
1 Tbl. cornstarch
2 Tbl. balsamic vinegar
8 oz. chanterelle or button mushrooms; these should be cleaned, trimmed, and sliced
1/4 c. shopped onions or shallots
1 tsp. fresh rosemary or 1/4 tsp. dried rosemary
Rinse and pat dry turkey and set aside.
Use a small bowl to stir together broth, salt and pepper, and cornstarch. Set this aside.
Use vegetable oil cooking spray to coat a large skillet and place it over medium-high heat.
Add half the turkey to the hot skillet and cook about two minutes on each side. The turkey should be tender and no longer pink. Set aside and do the same to the other half of the turkey. Remove the skillet from the heat, and keep the turkey warm.
Add the vinegar and rosemary to the skillet. Scrap up all of the brown bits from the bottom of the pan. Then, put the skillet back on the heat and use it to cook the mushrooms and onions (or shallots). It should take about five minutes for the mushrooms to become tender.
Stir in the set aside broth mixture. It will take about three minutes for it to become a sauce, thickened and bubbly. Cook for two more minutes after that, stirring constantly. This sauce is served with the turkey. For an elegant tough, the turkey can be served on a bed of fresh rosemary.
Once you know what you can do to enjoy healthful meals without sacrificing the flavor, you can take better care of your body and of your heart. And that is a delicious proposition.

Fry a small bit of the mix to see if you need to adjust taste. Add more salt, pepper, or cheese if needed. Shape mixture into patties. If the patties are falling apart, add more breadcrumbs. Fry patties, drain on paper towel and place on buns. Top with tomatoes. You can also top with lettuce, cucumber slices or fried eggs if you wish.
To make sure you don’t run out of time in the morning, prepare the patties before sleeping. Keep the patties in the chiller overnight. Make sure that you don’t freeze them! Fry them in the morning while you prepare the buns.

Directions:
Pour Fajita mix and half of the Cilantro leaves onto chicken breast fillets and mix well. Saute chicken breasts in 2 tbsp olive oil until chicken is cooked through. Remove from heat and wrap in foil. Add the rest of the olive oil on pan and saute the vegetables in medium heat. Heat flour tortillas in pan, grill, or microwave for a few seconds.
Orange Chicken
Ingredients:
1/2 cup cornstarch
pinch of salt (or to taste)
pinch of cayenne pepper (or to taste)
250g chicken thighs, deboned and cut into cubes
vegetable oil (enough for deep frying)
1 cup freshly squeezed orange juice
1 tbsp cornstarch
1 tbsp water
2 tbsp oyster sauce
2 tbsp sesame oil
pinch of freshly ground black pepper
1/2 cup orange segments
1 red bell pepper, seeded and sliced
Directions:
Dredge chicken in first three ingredients. Deep fry chicken in vegetable oil until golden brown. Place in paper towels and set aside. Place 1 tbsp sesame oil and orange juice in saucepan. Let simmer for a few minutes and add cornstarch that has been dissolved in water. Let sauce boil for a few minutes and add back the chicken along with the rest of the ingredients. Simmer for a few more minutes while seasoning to taste. If you get tired of chicken, you can substitute anything from pork to squid, for this recipe.
Chicken Lollipop
Ingredients:
10 chicken wings
1 cup breadcrumbs
1 tbsp cornflour
1 tsp garlic powder
1 egg
pinch of salt and white pepper (or to taste)
vegetable (enough for deep frying)
Directions:
Prepare batter by beating egg and mixing in all the ingredients, except for the chicken and oil. Break each chicken wing into two parts at the joint. Using a knife, pull and scrape the meat off the top to the bottom of the chicken pieces, trying your best to make them look like a lollipop. Dredge chicken lollipops in batter and deep fry each piece until golden or dark brown.
